The Magnitude of Label Reading When Gluten-Free
What to look for?
First and foremost, look for the easy find products. Many gluten-free products will advertise it with big bold lettering across the front. Many times - particularly in larger chain grocery stores, the gluten-free products will be placed together.
If "gluten free" is not clearly labeled across the front, look for a common allergy section in the ingredients list. Since those with celiac disease will react to gluten like it's an allergy, the grains that gluten can be found in are often listed in this section - with other common allergens like peanuts.
After step 1 and 2, take a few minutes to read ALL the ingredients that are listed. This is critical to check for hidden gluten. Products such as packages sauces, gravies, and even soy sauce contain gluten but it's not always obvious.
