Saliva Rothia: A digestive enzyme that is in development
Under Henry M. Golden School of Dental Medicine, researchers have, upon studying how proteins break down in saliva, discovered an enzyme called Rothia in a bacterium that pulverizes gluten. Though this research is fairly new, the results have been promising enough that some scientists focus on this to hopefully offer an enzyme digestive therapeutic solution for people with celiac disease.
