Did I have a mini stroke
A couple days ago, I was standing and doing work on my laptop when my right eye started randomly hurting a lot as if it was getting pinched and felt itchy and both eyes were watering a lot, to the point where I couldn’t open them and if I did it would be as if a ton of tears were flowing down my face. My head also hurt a little bit. After ~30 sec it stopped. What happened?

There is no way of knowing just based on the history given. You need to have a medical evaluation by your doctor or an Ophthalmologist. It's your eyes, I wouldn't delay a thorough medical exam
