You may continue having symptoms associated with celiac disease such as bloating, diarrhea, abdominal pain, and iron deficiency.

It varies a lot from person to person. Some celiac patients have no symptoms so staying on gluten makes no difference to them and they may not have any idea of the diagnosis. If celiac is causing symptoms or lab test abnormalities (e.g., anemia or liver test elevation), then staying on gluten will perpetuate the small bowel damage as well as any symptoms or lab abnormalities.
