• Will Long term delayed pooping cause issues?

Usually after lunch at 1pm, I will want to poop, but my work schedule only gives me free time around 4pm. I'm wondering if delaying that will cause long-term issues!

It's not a good idea to forcibly prevent yourself from stooling when your body is telling you to evacuate.
Eating a smaller lunch will make it less likely that the meal will stimulate a bowel movement.
