I've been really careful with my diet since I was diagnosed with celiac disease. However, lately, I've been getting severe headaches that often knock me out for the entire day. Are headaches and migraines a normal symptom of celiac disease?

No, headaches are not a typical symptom of celiac, especially if you are treating it with a gluten free diet.
