As an alternative, Colgrave is working to develop a better gluten test than ELISA. This is one way for gluten-reduced beer makers to guarantee customers that their beers are safe for celiac consumers. Colgrave’s group came up with an analytical method named liquid chromatography-mass spectrometry or LC-MS, and this method uses a device with two parts. There’s a long tube that allows certain kinds of molecules to slip through quickly but slows other molecules. The tube is then followed by a hollow chamber that assesses the amount or parts of a molecule. The LC-MS device can speedily and precisely find out what substances are in a beer.
