Breweries now have more options when making gluten-reduced beers. If they use barley or wheat which contains gluten, they can separate the gluten from the beer, and they can also destroy the gluten in the beer. Destroying gluten can be done by using enzymes (substances that speed up chemical reactions) that cut gluten proteins into tiny bits.
However, this procedure still doesn’t eliminate antigens that prompt a reaction in people with celiac disease. A study found that beers with these antigens caused an immune reaction when tested in some celiac disease patients, even when the gluten was said to be removed.
