How to Feed a Child Athlete with Celiac Disease

Canadian bacon and egg cups

Here's what you need:

  • 6 ounces Canadian bacon
  • 10 large eggs
  • 5 tablespoons shredded cheddar cheese
  • Fresh parsley chopped

Heat oven to 350°, spray muffin tins with nonstick cooking spray.

Place one round of Canadian Bacon in each cup and press to line the sides and bottom. Crack eggs and place in Canadian Bacon cups. Sprinkle with ½ tablespoon of cheese.

Bake in the preheated oven until eggs are set or done to your liking (maybe 12-18 minutes). Sprinkle with fresh parsley. A gluten-free breakfast that any person with celiac disease will love.
