How to Feed a Child Athlete with Celiac Disease

Here's what you need:

  • 14 gluten-free crackers (read the cracker package to ensure that it is gluten-free)
  • ½ cup mayonnaise
  • 3 tbsp. celery finely minced
  • 2 tbsp. parsley minced
  • 1 ½ tsp. seafood seasoning
  • 1 tsp dry mustard
  • 1 tbsp. lemon juice
  • 2 large eggs
  • 1-pound crab meat
  • Vegetable oil
  • Gluten-free pantry all-purpose flour mix (read the label to ensure there is no wheat flour in this mix)

Grind crackers into crumbs, and then mix the rest of the ingredients.

Line a surface mat with the flour mix. Form into 6 cakes pressing just firmly enough to shape. Let sit for 5 minutes.

Coat a large skillet with vegetable oil and set over medium heat.
