The Magnitude of Label Reading When Gluten-Free
A few things to remember
Despite a large number of people with celiac disease, manufacturers are not required to test for gluten to label it gluten-free. This means that items may be cross-contaminated and still be labeled as gluten-free.
The FDA, otherwise known as the food and drug administration, will only review food labels following a consumer or industry complaint. So in other words, a product that may be cross-contaminated with gluten will only be reviewed after gluten is consumed by someone who shouldn't have it.
